Coconut Lime Cupcakes

I shared this recipe at the Cupcake Neighborhood Knowhow but Missy asked for it on the blog. Here you go.

Coconut Lime Cupcakes

1 golden vanilla cake mix

1 1/3 c. coconut milk

3 eggs

1/3 c. canola oil

1 c. sour cream

1 cup coconut (optional)

mix all ingredients together until smooth. Put into 24 muffin papers and bake at 350 for 19 minutes. (1/4 cup measuring cup is the perfect amount of batter for each cupcake)

Lime Glaze (for diehard citrus lovers)

1/2 cup of sour cream

3 Tbs. sugar

zest of 1/2 lime

juice of 1/2-1 lime depending on how juicy it is.

spread on baked, cooled cupcakes

Frosting

1/2 stick butter

4 oz. cream cheese

4 cups powdered sugar

zest of one lime

juice of one lime

mix all ingredients together and pipe onto cupcakes
