Coconut Macaroons


Many of you have requested this recipe. So here you go! Very easy and good.

Preheat the oven to 350 degrees F.

Combine the coconut, condensed milk, and vanilla in a large bowl. Whip the egg whites and salt on high speed in the bowl of an electric mixer fitted with the whisk attachment until they make medium-firm peaks. Carefully fold the egg whites into the coconut mixture.

Drop the batter onto sheet pans lined with parchment paper using a tablespoon. Bake for 12 to 15 minutes, until golden brown. Cool and serve.


Ganache

4 oz. bittersweet or semi sweet chocolate

1/2 cup heavy cream

Heat cream in microwave until just boiling. Break up chocolate and pour into cream. wait a few seconds and then stir together until chocolate is shiny and combined with cream. Dip macaroons half way in and place on parchment paper to dry, or in fridge until set.
