buffalo chicken salads. yum.

another totally go to recipe for me (in fact i think we will have it tonight!).  buffalo chicken.  we always have the sauce stuff on hand, chicken tenders in the freezer and lettuce of some kind in the fridge, with veges.

makes 4 servings

1/4 C Louisiana style hot suace
1 tsp. hot pepper sauce - like Tabasco
1 tsp. Worcestershire sauce
2 T. butter

6-7 Chicken Breast TENDERS
1 C chicken broth
fat free blue cheese dressing (which i never liked until i tried it with this!)
bunch of lettuce ready for a salad and carrots and celery sliced for dipping in the sauce!

i never get chicken out to thaw for this because i think it is easier to just boil it up.  so i fill a saucepan with water, and put in the tenders.  they cook at a soft rolling boil for about 10 minutes.  then i take them out and cut off the little fatty part off the top, drain all the water out, and put 1 cup or so of chicken broth in with the chicken - and just let it cook down on medium heat - until the water is about gone.  (I added this step into the original recipe just so there is more flavor).

combine hot sauce, pepper sauce and worcestershire sauce in a small saucepan over med. heat.  bring to a boil and cook for a minute.  remove from heat and add the butter, stirring until melted.  Once all melted, pour onto chicken and just mix around until the chicken is all covered up!

Serve over lettuce with carrots and celery on the side to dip into the dressing too!

i like using tenders because they cook up fast.  but you can use the whole breast if you want to.

**If this is too hot for you, add a little fat free sour cream to the buffalo sauce mixture.  That helps to cool things down a bit!**

enjoy.  i think we will be eating these this weekend for a little superbowl party.  i may try to make baked breaded chicken tenders and then make the sauce for dipping.  yum.
