yummy breakfast casserole

friends.  i have a lot of yumminess to post.  let's start with this one.

so, we have been making this a lot.  so yummy.  and i have been putting turkey breakfast sausage in it.  we all love it.  when i make this, i cook up my whole pound of turkey sausage, throw in a ton of spinach once it is almost done cooking.  Then, when the turkey is done and the spinach has wilted, i split it up into to big portions.  one i use for the polenta goodness, the next you will see in the following recipe . . .

*1/2 pound cooked turkey breakfast sausage
*6 egg whites (you can use the whole egg -  use 4 eggs then, it is just less WW points with only the whites - and well, we are trying to be good - tis the season!)
*3 pieces wheat bread cut up into cubes
*1/2 C - 3/4 C fat free sharp cheddar cheese
*handful of spinach
*1/2 C or so of red or green peppers chopped up
*1/2 C - 3/4 C milk
*salt and pepper to taste

put all the above ingredients in a big bowl and mix until everything is all incorporated.  spray a 9x9 baking dish with butter or olive oil spray and then pour the mixture in.  if you want to, you can sprinkle some more yummy cheese on top.

cook at 375 for 30-45 minutes.  You want to be sure the eggs are setup and cooked - so if you pick up the baking dish, it should not slosh around!

This is a reduced fat and much simpler version of the one my mom cooks on Christmas morning.  We love it.  It is good comfort food during these winter months!

ps, sometimes people likes salsa on it.  not me, but that's ok!  let me know if you have any questions about this yumminess.
